We love this pasta with Parmesan sauce when we’re craving something really cheesy. The creamy taste is complemented by roasted mushrooms, parsley and chilli.

Ingredients
250g mushrooms
2 cloves garlic
1 chili pepper
50g parsley
100g Parmesan (highly recommended to buy a whole Parmesan, not grated)
250ml sweet cream (for whipping)
200g pasta (such as spaghetti)
1dcl of white wine
1 teaspoon sugar
2 tablespoons olive oil
salt
Instructions - Pasta with Parmesan sauce
Cook the pasta according to the instructions on the package
Peel and cut the mushrooms into strips and fry in a dry pan on a high heat (with no oil). After a while, the mushrooms release their own juice, but when you roast them like this without oil, they catch a nice brownish color
Meanwhile, chop the garlic cloves, chilli and parsley stalks finely, and when the mushrooms release the juice, add everything together with the olive oil to the pan
Lower the fire to about medium, add a little salt and a teaspoon of sugar and let it roast for 3 minutes so that nothing burns, mix here and there
When everything seems lightly roasted, pour a pan of sweet cream and 1dcl of white wine, mix and let boil for about 10 minutes. Stir ioccasionally
Meanwhile, grate the Parmesan cheese and gradually add it to the sauce until it cooks. You can always add a handful of grated Parmesan cheese and stir until it dissolves in the sauce, then repeat with another handful until we have all the Parmesan cheese in the sauce
Cook for another 2 minutes, taste and if necessary add salt, and if the sauce seems too thick, you can add a little more wine. When you taste the sauce, try to have a really strong flavor because it will get less strong once it is mixed with the pasta
When the pasta is ready, strain it and add to the sauce pan. Mix everything well and you’re ready to serve
