This bruschettas recipe is extremely simple, fast and tasty – ideal for lazy days or when looking for a recipe with little ingredients. We’ve been doing it since long time ago, and I learned it from my brother ‘Petrz’, who had loved cooking since he was young.

Ingredients
5 tomatoes
5 mushrooms (optional)
2 medium cloves of garlic
Gouda / Edam (or some cheese that melts)
fresh basil (optional)
bread
spices:
marjoram
oregano
basil
chilli (optional)
Instructions - Bruschettas
Heat a bit of olive oil in a pan and add a teaspoon of dried marjoram, oregano and basil (or Provencal herbs). The aroma of herbs will release beautifully in hot oil. But be careful not to burn the herbs, only fry for about 30 seconds
Add sliced mushrooms and leave to roast for 3-4 minutes, until they’re soft
Add tomatoes sliced into bigger pieces. After about 2 minutes, gently crush the tomatoes with the cooking spoon – just a little bit
Add crushed garlic and cook for approximately 3 minutes until everything is fine but not too liquid
Meanwhile, prepare the toasts and grate cheese
Add the tomato mixture on the toasts with the help of the cooking spoon, top off the bruschettas with grated cheese and fresh basil
