Classic pizza from a homemade dough. Easy on ingredients, but you always have to plan ahead because of the dough.

Ingredients
400 g plain flour
Yeast – if dried, about 3-5g, if fresh, about 20g
400 ml tomato puree
400 g Mozarella
Baking paper
Olive oil
Any toppings, e.g. options:
Funghi: mushrooms
Red onion, cherry tomatoes, basil, mini mozzarella
Vegetariana: mushrooms, zucchini, pepper
Spices:
salt
oregano
basil
Instructions - Pizza
Prepare the dough for pizza at least 2-3 hours in advance (ideally 6-8 in advance). Put about 400 g of smooth flour (about two classic cups) into a bowl. Mix about 200 ml of water (about one cup) with yeast (about 3g in the dry state, if about 20g fresh), pour into a flour bowl and add salt. Stir the dough until homogeneous. Add water if the dough is not well mixed or add flour if the dough is too watery. Let stand for 2-3 hours (or longer). The dough should get 2-3 times its original volume.
Switch on the oven to its maximum temperature (heating from both the top and bottom – the so – called fan). We divide the dough into two parts – we recommend working with your hands constantly covered with flour/oil. Both parts are made into a spherical shape, the surface of which is covered with flour so that it does not stick. Roll to a circular shape approximately 25 cm in diameter (smaller circle than the final one). Put the baking paper on the baking tray and transfer the dough to it. Gently by hands (first using palms and fingers to shape the edge of the pizza) we start to push out the circle to make the pizza a little bigger, leaving more of the dough on the edges, depending on your taste. The final size should be about 30-35 cm (circle diameter).
Stir in a bowl of tomato puree (approx. 400 ml) with olive oil (2-3 teaspoons), add salt, basil, oregano and black pepper. Spread evenly over the pizza.
Finely cut all toppings and spread evenly over the pizza.
When the oven is hot, switch the mode to the bottom baking only. Put the pizza one at a time into the oven at the lowest level and bake for about 15-20 minutes until it is ready (time may vary from oven to oven)
