Red curry

If you manage to buy curry paste, this recipe is very simple and has a really interesting taste. A little heavier coconut milk and spicy curry paste are freshened by sweet veggies

Ingredients


  • 1 red onion
  • 2 medium sweet potatoes
  • 1 small red pepper
  • fresh basil on top (optional)
  • 200 g spring peas (if not found fresh, they can be bought frozen)
  • 500 ml coconut milk
  • 2 tablespoons curry paste (usually available in Asian sections in grocery stores, it can be red / yellow / … curry paste)
  • 50 g peanuts
  • 1 – 3 tablespoons of honey (based on taste preferences)
  • 360 g of jasmine or basmati rice

Instructions - Red curry


  1. Pour rice into a smaller pot and pour approximately twice as much water. Allow to cook for about 20 minutes until the rice is ready
  2. Peel and wash the sweet potatoes and cut them into approximately 2 cm cubes
  3. Pour a little oil into the pot, add chopped sweet potatoes and 2 tablespoons curry paste (be careful, it is very spicy), add salt, mix and roast for about 5 minutes
  4. Pour coconut milk over the sweet potatoes in the pot. Cut the peppers into strips and add them to the pot along with the peas and let them cook for about 10 minutes.
  5. Finally, add the onion sliced into half-circles, 1 – 3 tablespoons of honey (based on taste preferences) and salt
  6. When serving, sprinkle with finely crushed peanuts and basil (optional) and eat with rice
