Green Pasta

This recipe for green pasta was created by combining and modifying various green sauces. Avocado is the basis of the sauce and basil, spring onion and garlic give it a nice flavor. We recommend eating with fresh cherry tomatoes to balance the flavors

Ingredients


  • 1 ripe avocado
  • 1 spring onion
  • a large handful of fresh basil or another favorite herb (eg. parsley / cilantro)
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 100 ml almond milk (or plain milk)
  • 150 g white yogurt (optional)
  • 2 tablespoons olive oil
  • 200 g pasta
  • on top (optional):
    • 200 g cherry tomatoes
    • Parmesan
    • pine nuts (sometimes hard to find, but not at all essential to the recipe)
  • spices:
    • basil
    • black pepper (optional)

Instructions - Green Pasta


  1. Cook the pasta for two portions according to the instructions on the package
  2. While cooking the pasta, make the green sauce: put all the ingredients in the blender (no need to chop too much) – avocado, spring onion, basil, garlic, lemon juice, almond milk and possibly yoghurt. We also add two tablespoons of olive oil, 1 teaspoon of salt and black pepper and season with 2 teaspoons of basil. We mix everything well together to a fine green sauce. If it seems too thick, we can add a little more milk
  3. When the pasta is ready, pour it through a sieve and then mix with the sauce. Green pasta can be served with grated parmesan, cherry tomatoes and pine nuts
