Creamy Broccoli Soup

I have this recipe for the best creamy broccoli soup from my mom – the biggest broccoli lover. It is very simple, tasty, beautifully creamy and super healthy

Ingredients


  • 1 onion
  • 4 potatoes
  • 1 broccoli head
  • 1 cauliflower head (optional)
  • garlic – at least half a head
  • 1 teaspoon of garlic in salt paste (can be replaced with 3 fat garlic cloves, but tastes a little worse)
  • spices:
    • Salt
    • ground mace or nutmeg at the tip of a knife

Instructions - Creamy Broccoli Soup


  1. Finely slice the onion and fry it on oil in a pot until silky
  2. Meanwhile, peel, wash and cut the potatoes into cubes. Also wash the cauliflower and broccoli and finely slice them
  3. When the onion is finished, add the prepared vegetables (potatoes, broccoli, cauliflower). Salt a bit and if you have, add a teaspoon of garlic in salt paste, if not, add 3 crushed garlic cloves and some more salt. Cook for a few minutes and stir occasionally
  4. Pour in a bit of water (about 3 dcl) so that the vegetables are just covered and let it simmer until the vegetables are soft (around 10 minutes)
  5. Add crushed half head of garlic
  6. When the vegetables are soft, pour everything into a blender and mix it well. If the soup seems too thick, add a bit of water
  7. Season with salt, mace or nutmeg and possibly a little bit of garlic in salt paste to taste
