For me, as the biggest tomato soup lover is finding the best recipe a never ending mission. Therefore, we might still change this recipe but for the moment this one wins.

Ingredients
2 larger onions
5 tomatoes
500 g tomato purée
fresh basil (optional)
(whipped) cream (a little on top)
parmesan cheese for sprinkling on top
olive oil
spices:
basil
oregano
black pepper
salt
sugar
Instructions - Tomato Soup
Warm up 1 liter of water in the kettle. Wash the tomatoes and make two very shallow cuts in shape of a cross on the top and bottom of them. Put them in a bowl and pour over the boiling water from the kettle. Leave them for a few minutes – they’ll be easier to peel.
In the meantime, slice the onions into large pieces (1 onion into 12 pieces), pour olive oil in the pot so that the bottom is covered and add the onions. Fry a little (5 minutes), season with salt and all the spices and add about 2 small teaspoons of sugar.
While the onion is cooking, take the tomatoes out of the boiling water and peel the skin off of them. Then cut them in larger pieces, approximately the same size as the onions before, add to the pot and leave everything to cook for another 3 minutes.
Add the puree and bring to boil. Afterwards, turn off the heat, pour everything into a blender and mix well. Then return the soup to the pot and add about 3 dcl of water.
Bring the soup to boil again, add the chopped fresh basil and season to taste (salt, sugar, ..)
Serve the tomato soup with cream, grated Parmesan and fresh basil
