Quesadilla is a very simple meal that, thanks to roasted peppers, mushrooms and melted cheese, we crave especially when we want something more “yang” – for example when we drink we go crazy how good it is;)

Ingredients
3 colored peppers (for example, red, yellow and green)
500 g mushrooms
3 large or 4 small white onions
1 big red onion
handful of fresh cilantro (herb)
2 cloves of garlic
5 tomatoes
250 g cheese (some semi-hard, which melts well)
8 tortillas
teaspoon of lemon juice (optional)
spices:
oregano
cumin
coriander
sweet paprika
chilli (optional)
marjoram
Instructions - Mushroom & Peppers Quesadilla
Finely chop the white onions and the bell peppers into strips and put them both in a pan on oil and roast on low heat for about 15 minutes until the bell peppers are soft
Meanwhile, clean and chop the mushrooms, chop 1 tomato into pieces (as an onion) and add to the pan when the pepper is soft. Also add a teaspoon of all spices, season with salt and let roast together for another 10 minutes. One minute before the end, add crushed garlic to the pan
In the meantime, prepare a salsa in a separate bowl – chop the remaining tomatoes and red onion as finely as you can. Put in a bowl and mix with chopped cilantro and a teaspoon of lemon juice and season with coriander, salt and chili
When the salsa and the mixture are in the pan, put a second, clean pan on medium heat. When the pan is warm, place the tortilla on it and heat for about a minute from each side. Then put the tortilla on a plate, put the pepper mixture on one of its halves, grate the cheese and close the tortilla by simply folding it in half. The quesadilla folded in this way can now be cut into three triangles. We prepare the remaining quesadillas the same way and eat together with the salsa
