Salad with Goat Cheese and Roasted Carrots

Ingredients


  • 5 as thin and youngest carrots as possible
  • salad leaves of preference
  • 1 pomegranate
  • 200g goat cheese
  • olive oil
  • vinegar balsamic
  • spices:
    • Italian herbs (oregano, basil, thyme, …)
    • for example salad spices

Instructions - Salad with Goat Cheese and Roasted Carrots


  1. Preheat the oven to 180 ° C
  2. Clean the carrots, cut along the longer direction, then spread on a baking sheet. Sprinkle gently with oil, season with salt and Italian herbs. Bake for about half an hour or until the carrots are nicely cooked
  3. Meanwhile, sprinkle salad leaves on a plate, tear goat cheese and sprinkle with pomegranate (if you bought the whole pomegranate, there are YouTube videos on how to get the seeds out of it)
  4. When the carrot is ready, add it to the salad. Season with olive oil, balsamic and salad seasoning
