3-4 tomatoes
2 medium sweet potatoes (sweet potatoes)
rucola, 100g
2-3 spring onions
feta cheese
olive oil

Italian herbs (oregano, basil, ..)
Instructions - Sweet Potato Salad
Heat the oven to 220 ° C. Remove ugly parts of the sweet potatoes, but don’t peel. There are two options, depending on how hungry you are. Either keep the whole potatoes intact, or cut them into smaller shapes, such as circles. Place them on a baking tray and bake for 40 minutes – 1 hour until they are soft (depending on the size).
In the meantime, we cut the tomatoes into wedges and the spring onion into wheels. Sprinkle arugula on the plate and add the tomatoes and onions.
When the sweet potatoes are ready, add them to the plate and sprinkle with feta cheese, pour olive oil and season with Italian herbs.
