Shakshuka is one of the warm, saucy and very tasty and healthy meals that we would classify as “comfort food”

Ingredients
3 tomatoes
1 yellow pepper
1 red pepper
1 onion
1 fat garlic clove
1 small fresh chili pepper
a piece (like a half inch) of ginger
fresh parsley leaves
400 g whole canned tomatoes
4 eggs
200 g feta
1 tablespoon Worchester sauce
4 dl jasmine rice (2 cups)
spices:
sweet pepper
ground Roman cumin
ground coriander
Instructions - Shakshuka
Heat the olive oil in a pan and add the chopped onion, peppers and chilli. Season with all the spices (a small teaspoon of each). Let it rest for a few minutes, mix it occasionally so that nothing gets burnt. Add the finely sliced ginger and crush the garlic.
In the meantime, put the rice in a small pot, pour two glasses of rice in two small pots, pour twice the water, add salt and cook under a lid on a low heat until all the water has disappeared – about 20 minutes
Cut the tomatoes finely, add them and the canned tomatoes to the pan. Press the canned whole tomatoes with spatula. Add Worchester sauce and salt, mix and cook for about 20 minutes.
You can choose to leave the mixture in a frying pan or pour it into a baking pan – it is not too much a difference if you do not have a suitable baking pan. In any case, at the top, break 4 eggs a bit apart to avoid mixing and leave on heat (or put in the oven) until the eggs are cooked.
Sprinkle with feta cheese and fresh parsley and serve with rice.
