Fusilli with Cherry Tomatoes and Pine Nuts

Ingredients


  • 250 g cherry tomatoes
  • 1 onion
  • fresh basil
  • 1 clove of garlic
  • 50 g pine nuts
  • 400 g tomato puree
  • 250 g fusilli pasta
  • 50 g Parmesan
  • spices:
    • oregano
    • basil
    • thyme
    • chilli (optional)
    • salt, black pepper

Instructions - Fusilli with Cherry Tomatoes and Pine Nuts


  1. Cut the onion finely, place in an olive oil pan and roast for 5-8 minutes
  2. Meanwhile, cook the pasta according to instructions on the package
  3. Then add spices and pine nuts to the onion pan and roast for about 3 minutes to lightly brown the nuts
  4. Add tomato puree and cherry tomatoes and let simmer for another 15 minutes to sweeten and soften the tomatoes
  5. Add garlic and a little grated Parmesan before the finishing and let it simmer for about 3 minutes. Add salt and season to taste
  6. When the pasta is ready, mix it with the sauce
  7. Sprinkle with Parmesan and fresh basil
